Since I was gone for most of this week, I decided to just combine last week's finds with those I've found in the past few days (somehow I found a lot more in the past few days).
I've also started to include pictures from each find*. Enjoy!
Beautiful looking pancakes, that are healthy with the addition of whole wheat flour and oats. I love that it's a small batch, so you're not stuck with 3 dozen pancakes.
A very simple fritter made with ricotta, spinach, egg, parmesan and panko. It would also work well with other greens, such as beet greens or swiss chard.
Panko-Crusted Fish Over Kale
Fish is crusted in a mixture of panko, butter, lemon and herbs, and served over a raw kale salad.
Torn Pasta Sheets with Browned Butter, Fresh Herbs and Poached Eggs
This sounds delicious, and is a great way to use up broken pieces of pasta that are too small for lasagna.
Healthy chicken breasts are smothered with garlic, tomatoes, basil, fresh mozzarella and good quality balsamic vinegar
This is certainly a mouthful - this combined a sweet honey cornbread with a jalapeno cheddar biscuit and looks to be delicious. To make it simpler, you can make them as drop biscuits.
Savory Zucchini Asiago Tomato Scones
Described as "light and biscuit-like savory scones made with a blend of whole wheat and white flour, shredded zucchini, sundried tomatoes, Asiago cheese and fresh rosemary." Sounds delicious!
I think this combines all of the best cookies in one. The recipe even uses both white and brown sugar, which is best for getting good flavor while still avoiding a flat pancake cookie. A bit of whole wheat flour sneaks in, as does a tiny bit of cocoa powder.
Peach and Pecan Sandy Crumble
This is described as a mash-up between a standard peach crumble and pecan sandies cookies. Make sure to use flavorful ripe peaches, and toast your pecans for the best result!
Vanilla Bean Cake with Browned Butter Icing
This is a simple cake that boasts some complex flavor - a sour cream one-layer cake that is generously flavored with vanilla, topped with a browned butter frosting that is also flavored with vanilla. The best part is that this recipe can easily be doubled for a layer cake.
Coconut Take-Out Rice Pudding
This uses leftover rice from Chinese take-out to make a delicious rice pudding! Despite the heat, it is described as being much better hot than cold.
Cinnamon Orange Crumb Cake
A basic crumb cake, but the cinnamon and orange must give it a little extra something.
Peach Streusel Ice Cream
An ice cream base made with browned butter is made even more decadent with the addition of caramelized fresh peaches and a cinnamon streusel. Delicious.
Coffee Cake with Crumble Topping and Brown Sugar Glaze
This coffee cake has both a crumble topping and a brown sugar glaze. You might think it's healthy because of the greek yogurt, but think again. I think the 3 sticks of butter and almost 3 cups of brown sugar negate any health benefits from the greek yogurt. Oh well - I guess I'll have to make this to share!
Nectarine Streusel Coffee Cake
Lots of coffee cakes this week! Here, the basic cake is topped with nectarines (or peaches) and a cinnamon crumble topping.
Banana Snack Cake with Cream Cheese Frosting
A sweet and tangy snack - bananas combined with buttermilk in the cake, covered in a cream cheese frosting. A different way to use up old bananas if you're sick of regular banana bread.
