What I Made Last Week - 2 (and 3)

Monday, July 29th:

Jen's Dinner: Baked Tilapia with Steamed Veggies and Oven Fries - veggies steamed until just tender, and fish baked at 375 for 8 minutes.

Joey's Dinner: Steak Frites with Steamed Veggies

Pickled Jalapenos

We had a lot of leftover liquid, so we wished that we had used more jalapenos to make more jars. 

Tuesday, July 30th:
Leftovers night - Harvest Grains with Sauteed Veggies + Leftover Drunken Noodles from Lemongrass

Friday, August 2nd:
Fried Eggs on Toast for lunch - After an exhausting Thursday, I worked from home on Friday. I took advantage of that and made myself a delicious lunch.



Baked Tortilla Chips with Dip
Making your own homemade tortilla chips is really easy and healthy! Just cut corn tortillas into wedges, put on a foil-lined pan and give a spritz with nonstick cooking spray. Sprinkle with salt and desired seasonings. Cook at 375 for 15-20 minutes, flipping once.

Monday, August 5th:
Pesto Tortellini with Pesto, Goat Cheese, Sauteed Veggies and Roasted Shrimp

Honey Wheat Bread - made again
One side stuck to the pan a bit :( It turned out okay though.

Tuesday, August 6th:
Homemade Applesauce Granola - I didn't take a picture, but Joey made another batch of granola after I went to bed.

Thursday, August 8th:
Baked Egg Rolls + Leftover Mole Fajitas
